    Bobby Flay's Coffee based meat rub

    Ingredients
    1/4 cup ancho chile powder
    1/4 cup finely ground espresso-roast coffee beans
    2 tablespoons sweet paprika
    2 tablespoons dark brown sugar
    1 tablespoon dry mustard
    1 tablespoon salt
    1 tablespoon freshly ground black pepper
    1 tablespoon dried oregano
    1 tablespoon ground coriander
    2 teaspoons ground ginger
    2 teaspoons chile de árbol powder or cayenne (optional)
    Preparation
    Combine all the ingredients in a bowl or a jar with a tight-fitting lid and mix well. Store in a cool place. Omit the chile de árbol if you want a milder rub. To
    use: Proceed with the master recipe, replacing the kosher salt with a coating of 1 tablespoon of spice rub on each steak, plus salt to taste. During searing,
    there will be a bit of smoke, but the steaks are not burning; it is just smoke from the spices in the rub. Works on all steaks but is best on strip steaks or ribeyes

    you wouldn't think it's good but when done properly it's awesome. i use to do an espresso rubbed pork chop at the restaurant that was a big seller.

    You basically just coat the chop and then pan sear it. Pop it in the oven in the same pan and cook it to the desired temp. Remove from oven and remove from pan. Put the pan back on the stove and hit it with a mixture of bourbon and molasses. Let that cook down in the pan until it's nice thick and incorporates all the espresso flavor.

    I had the coffee cured filet at Stoney River a few weeks ago and it was fantastic. You couldn't even taste any coffee flavor.

    In about 6 weeks our dining excursions are over, so we'll have to start putting the kitchen to good use. I'll have to try this.

    Actually, roasted coffee beans are very tasty. I had some chocolate covered coffee beans once and was surprised at how good they were. I've also had coffee rubs like this on meat and liked it.

    That said, I would not put it on a really good cut of meat. I'm a purist when it comes to the best cuts. But for sirloin this recipe looks really good. Thanks.
