the problem I run in to.......after 10 years in restaurants, I don't even use recipes. I just run and gun in the kitchen. Splash here, dash there, I dont go from books or recipes. If i have something in my mind, I just make it......recipes are for beginners....LOL

I don't cook by recipes, but I can write them down to give others.

Most of what I make I do by intuition. I can actually imagine what the ingredients taste like in my mind.
